RESIDENTIAL COURSES OF COOKERY

A different holiday, out of season, in one of the best Italian villages.

From November 27th 2011 onwards our typical hotel proposes a holyday marked by rest where our Chef and our Maitre will reveal the secrets of cookery and presentation of dishes.

Learning without stress, in a place where quietness absolutely reigns.

Week Planning:

SUNDAY afternoon:

  • arrival, accommodation in rooms. dinner and overnight staying

 

MONDAY:

  • Breakfast;
  • 10.00am - 12.00am Cookery course: soup of lentils from our mountains.
  • 1.00pm: Lunch.
  • 3.30pm - 5.30pm Cookery course: "our hors d'oeuvres".
  • From 6.00pm to 8.00pm guided visit of the typical Renaissance village of Santo Stefano di Sessanio.
  • 8.00pm Dinner.

 

TUESDAY:

  • Breakfast;
  • 10am-12am: Cookery courses: ravioli stuffed with ricotta cheese. 
  • 1pm: Lunch;
  • 3.30pm - 6.30pm Cookery course: sauces to season ravioli.
  • 8.00pm Dinner

 

WEDNESDAY:

  • Breakfast;
  • guided visit (optional) to the Grotte di Stiffe or, instead, going for a walk among the wonderful paths of the pleasant slopes of the Gran Sasso d'Italia. If there is snow, possibilities of excursions with the snow rackets.
  • 1.00pm Lunch.
  • 4.00pm - 6.30pm Cookery course: "noodles from the lake"(Typical Italian hand-made pasta stuffed with ricotta cheese, seasoned with saffron from Navelli, crusty bacon).
  • 8.30pm Dinner.

In case of snows it is possible to admire the wonderful phenomenon from the large window of the reception while tasting the delicious delicacies of our Chef.

 

THURSDAY:

  • Breakfast;
  • 10.00am - 12.00am Cookery course: meat "straccetti (little peaces of meat) seasoned with saffron from Navelli.
  • 1.00pm: Lunch.
  • 3.00pm - 5.00pm: Cookery course.
  • 5.30pm: Looking for the animals of the Park (In a land rover it will be possible to see the typical animals of the park without disturbing them: foxes, wild boars, deer, roe deer and even wolves).

 

FRIDAY:

  • Breakfast;
  • 0.30am - 12.30pm Restaurant course with the Maitre.
  • 1.00pm Lunch.
  • 3.30pm - 5.30pm Cookery course: fantasy of the Chef.
  • 8.30pm Dinner with the taste of the wonderful wines from our region.

 

SATURDAY:

  • Breakfast;
  • 9.30am visit of a truffle growing site with further taste of the products at lunch

 

SUNDAY:

  • Breakfast and departure
All suggested activities are optional and subject to variations on demand of guests.

Courses will be organized for at least 6 participants.  Reservation should reach us at least 15 days before the beginning of the course.
